Easy Peanut Butter and Chocolate Eclairs

 

Ingredients

1 3/4 cups cold milk (skim)
1 pkg (4 serving) French vanilla pudding mix
1 (8oz) tub Cool Whip Free
24 Graham crackers
6 squares Semisweet Chocolate
3 Tbsp butter

Preparation


Pour milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Layer one third of the grahams and half of the pudding mixture in a 13x9 dish. Breaking grahams as necessary to fit. Repeat layers. Top with remaining grahams.
Microwave chocolate and butter on high for 2 min. Stir after 1 min. Stir until chocolate is completely melted and mixture is well blended. Spread immediately over grahams.

Refrigerate at least 8 hours. Store in refrigerator.
